Easy sugar-free blueberry pie

Here’s a sugar-free blueberry pie recipe that I came across recently. It was yummy, too!

Ingredients:

  • 5 cups frozen blueberries
  • 1/2 can of frozen apple juice concentrate (12-oz can)
  • 1/2 c. white flour
  • 1 pie crust

In a large bowl, combine blueberries, apple juice concentrate, and flour. Mix together and set aside. 

Make pie crust. Divide pie crust dough in half. Roll half of it out between wax paper, place in pie pan and add the blueberry filling. Roll out the other half of dough. Using a cookie cutter (can use fun shapes to entertain your kids!) cut various shapes and completely cover the top of the pie with the dough shapes. 

Bake at 350 degrees for about an hour, until top of the crust is golden. 

I used white whole wheat flour for my pie crust. It turned out great! The filling thickened beautifully. It was sweetened just right, and it was really great!
